Heather honey is the aristocrat of all the honeys. Not only has it a noble appearance, with its dark, golden amber glow, its jelly like consistency, its aromatic boquet and superb flavor, but also, with a high protein content, it is a wonderful food. Unique among honeys in this respect, this high protein content, stems mostly from the gelatinous, albuminoid nature of the honey itself, quite apart from the pollen content. Ling Heather honey is Thixotropic - when stirred it goes much more liquid for a short time before reverting to a stiff like jelly substance.
